What's on the Menu Monday: Fresh and Easy

Breakfast: I’m sure it comes as no surprise that breakfast was once again caffeinated and in liquid form.  My coffee of the day was Gloria Jean’s Caramel Almond Torte with Coffee-Mate Caramel & Coconut Creamer which is part of their girl scout cookies line and inspired by my personal favorite - the samoa!!

Lunch: Lunch consisted of Oat Revolution Thick & Hearty Oats in the maple and brown sugar flavor.  If I don’t have a salad for lunch, I have this.  It’s not the mush meal that we’ve all come to fear when tearing open a bag of instant oatmeal.  It’s delicious and the oats are shaped like and taste like real oats.  How revolutionary!

Snack: One orange that I shared with Hendrix

Dinner: For dinner, I made sautéed cabbage, kale and tomatoes with fresh ginger and organic tricolor quinoa from Trader Joe’s.  The ingredients are pictured above…

Dessert:  Kroger Deluxe Churned Rocky Road Ice Cream (it has no sugar added and 50% less fat - yay!)

P.S. I’m sorry for the lack of posts recently!!  Things have been a little hectic but I’ll be resuming my regular posting schedule.

My Garden: Take Two

Last year, I purchased, I planted, I watered and waited.  I watched as tiny green sprouts emerged from the soil and grew into various veggies and herbs.  Then I got pregnant and busy and tired and the whole thing went to pot (pun intended).  This year, undeterred by my previous complete and utter failure, I’m starting again.

Below is a list of what I will be replanting from last year’s garden.  I’d also like to add a couple more vegetable plants and probably some flowers.  I’ll keep you all posted on that.

Serrano Peppers

I plan to get Ella involved a lot more since she’s old enough to take on many of the fun “responsibilities" of tending to a garden.  I’ll try to do (at the very least) a monthly garden update so you can see our little garden progress and I’ll be more obliged to keep up with my agricultural efforts.

What's on the Menu Monday: Super Bowl Snacks and Drinking Solo??!

Breakfast: Starbucks Pike Place Coffee with International Delight Sweet Cream Creamer

Lunch: For lunch, I had a salad with mozzarella, olives and bleu cheese dressing.  It was left over from yesterday.  In fact, it had remained untouched until I opened it this afternoon.  Never invite a salad to a Super Bowl gathering…

Dinner: More Super Bowl leftovers!  The picture above is the meal my mom prepared yesterday which included a mushroom, spinach and artichoke dish (which she made especially for me without the chicken she and my dad had), macaroni and cheese and collard greens.  It was delicious.  I had that same thing for dinner tonight minus the mac and cheese.

Dessert: Ah Super Bowl, I love you in so many ways and yet your leftovers leave me in loathing.  I had chips, soda and even a Dos Equis.  I can usually behave when it comes to food as long as it’s not sitting in our fridge, spread out on our table or otherwise readily available. Unfortunately, junk food was in abundance after the big game and I completely caved.  On another note, I’m alone with a sleeping Sadie right now, as J took Hendrix to his godfather’s surprise party and Ella is with her daddy.  I hardly ever drink if I’m not out somewhere in an adult setting (which is also a rarity) and I can count on half a hand how many times I’ve had a drink at home by myself.  Today was one of those days however - long and in need of a little bit of liquor.

30 Day Trial: 28 Days of Learning

I learned two things from watching Schoolhouse Rock! as a child - the entire Preamble to the United States Constitution and the idea that knowledge is power.  It wasn’t until I grew up that I learned the validity and importance of the latter.

For this month’s 30 Day Trial, I’ve decided to learn something new everyday.  This morning, I created the extremely random list above. When I was about halfway through, it occurred to me that perhaps I should have given myself a few days to work on this.  After a while however, I realized that the arbitrary nature of this collection of subjects is probably a great thing.  I began my 30 Day Trial posts in an attempt to become a more well-rounded individual and gaining knowledge on a wide variety of topics is one of the best methods of accomplishing that.

In lieu of short daily posts on what I learn, I’ll probably write a longer recap-type post either weekly or every few days.
